ROAST BEEF, FOOL-PROOF 
2, 3, or 4 rib roast beef

Place in preheated oven at 375 degrees for exactly 1 hour. Turn off oven. This may be done hours ahead of time - do not open oven again until you have done the following: set oven at 300 degrees and reheat 2 rib roast 22 minutes only, 3 rib roast 27 minutes only, 4 rib roast 35 minutes only. It will be rare and perfect with juice all through it.

Oak Hill Country Club recipe Yorkshire pudding - Beat together 1 cup sifted flour, 1 teaspoon salt, 2 eggs, 1 cup milk (Beat eggs and milk well together first.) Pour 1/4 cup hot beef fat in 11 x 7 x 1/2 pan; pour in mixture and bake at 450 degrees for 20-25 minutes. Cut in squares. Serve at once.
