TOMATO AND CHEESE BREAD 
2 1/2 c. all-purpose flour
1 1/2 tbsp. sugar
2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1/8 tsp. pepper
3/4 c. plus 2 tbsp. shredded sharp Cheddar cheese
1 1/2 tsp. chopped fresh basil
1 c. finely chopped, seeded and peeled tomatoes
1 tbsp. tomato paste
2 eggs
6 tbsp. butter, melted

Preheat oven to 350 degrees. Grease 9x5x3 inch loaf pan. Sift together flour, sugar, baking powder, salt, baking soda and pepper. Stir in the 3/4 cup Cheddar cheese and basil. Make well and stir in tomato mix until dry ingredients are JUST moistened and combined. Place in pan. Smooth top.

Bake in preheated 350 degree oven for 35 to 40 minutes. After it is cooled, sprinkle with 2 tablespoons Cheddar cheese. Cool in pan on rack. Then remove.
