ANTIPASTO DRESSING 
2/3 c. red wine vinegar
1/2 c. olive oil
2 tbsp. sugar
1 tsp. salt
1 tsp. oregano
Black pepper
2 tbsp. chopped parsley
2 cloves crushed garlic
2 tbsp. chopped onion

SALAD:

2 stalks celery, cut in 1/2-inch pieces
1 can artichoke hearts
1 head cauliflower, separated
8 oz. fresh mushrooms
1 can lg. pitted olives

GARNISH:

Lettuce
Hard salami

Combine dressing ingredients and mix well. Add a small amount of water to cauliflower, and microwave about 3 minutes. Drain cauliflower.

Add remaining vegetables, and mix with dressing. Chill several hours.

May be served on a leaf of lettuce and garnished with slices of hard salami. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
