OATMEAL MUFFINS 
1 c. sifted all-purpose flour
1/2 tsp. salt
2 tsp. baking powder
1 c. quick-cooking oats
1 c. milk
2 tbsp. oil
1/4 c. sugar
1 egg, beaten
Any fruit: blueberries, mashed banana, pineapple, apples and cinnamon (optional)

Preheat oven to 400 degrees. Grease well 12 (2 1/2 inch) muffin cups. Sift flour, salt and baking powder together. In bowl, soak oats in milk for 5 minutes. Add oil, sugar and eggs to oats. Add dry ingredients and stir only until just mixed. Fill muffin cups 2/3 full. Bake 25 minutes or until done. Makes about 12.
