ENCHILADA CASSEROLE 
1 1/2 lb. hamburger
1 1/2 c. grated Cheddar cheese
1 pkg. enchilada sauce mix
6-10 sm. flour tortillas
1 sm. onion
1 can Rotel
1 (6 oz.) tomato paste or tomato sauce

Brown hamburger and onion; drain. Make sauce according to package directions. Cook until thick, then add Rotel. Take off heat. Dip tortillas in sauce and line bottom of dish. Layer tortillas, meat, cheese and sauce; repeat. Cook until bubbly, 350 degrees for 30 minutes.
