SIMPLE CHEESECAKE 
1/4 c. butter
1 c. graham cracker crumbs

Place butter in a 9 inch pie dish. Microwave on high (100%) to 30-45 seconds until melted. Stir in crumbs. Press over bottom and up sides of the dish. Microwave on high for 2-3 minutes or until set. Cool.

FILLING:

1 (8 oz.) pkg. cream cheese
1/3 c. sugar
1 egg
1 tbsp. lemon juice

Place cream cheese in a large glass bowl. Microwave on low (30%) for 45-60 seconds or until softened. Beat n sugar and egg until smooth. Stir in lemon juice. Pour into cooled crust. Microwave on high 2-3 minutes or until set around the edges. Turn dish a half turn part way through the cooking.

TOPPING:

1 c. sour cream
3 tbsp. sugar
Fruit filling (optional)

Mix together sour cream and sugar. Spread over cheesecake, microwave on high for 1 to 1 1/2 minutes until topping is thoroughly heated.

Since microwave ovens vary in power, you may need to adjust your cooking time.
