HOBO HASH 
8 oz. chorizo (spicy sausage) or use ham (1 1/2 c.), precooked
4 lg. potatoes, cooked & diced
1 c. broccoli, chopped
1 sm. onion, chopped (1/3 c.)
3 tbsp. cooking oil
1/8 tsp. pepper
1 c. Cheddar cheese, shredded
Sour cream

Crumble sausage into 12-inch skillet. Cook until meat is browned. Drain. Add potatoes, broccoli, onion, oil and pepper. Cook over medium heat for 8 to 10 minutes or until golden on bottom, turning occasionally. Sprinkle with cheese. Cover and cook over medium heat until cheese melts. Serve the hot mixture topped with sour cream. Makes 6 servings.
