CAT FISH WITH NUTS 
1 lb. catfish or other firm fleshed fish fillets
2 to 3 tbsp. mayonnaise
1/4 to 1/2 c. Parmesan cheese
1 tsp. dried tarragon
2/3 c. chopped pecans or walnuts

Lightly coat both sides of catfish with mayonnaise. Place in baking pan, skin side up. Sprinkle fish generously with Parmesan cheese and tarragon. Cover with chopped nuts. Bake at 350 degrees for 15 to 20 minutes or until fish flakes easily when cut with a fork. Serves 4.
