CHICKEN RICE CASSEROLE 
1 c. cooked rice
2 3/4 c. cooked chicken, diced
1 c. chopped celery
3/4 c. mayonnaise
1 can undiluted cream of chicken
1 can undiluted mushroom soup
1 generous tbsp. minced onion
1 tbsp. lemon juice
1 sm. can water chestnuts, sliced
1/4 lb. butter
6 oz. seasoned stuffing (not cubes) - like Pepperidge Farm

Mix all ingredients except butter and stuffing. Place in buttered casserole. Toss stuffing and melted butter and place over mixture just before baking. Bake at 350 degrees for 45 minutes. Freezes well.
