SCOTTISH SHORTBREAD 
1 1/2 c. sifted flour
3/4 c. confectioners sugar
1/4 tsp. salt
1/2 lb. butter

Preheat oven to 325 degrees. Mix all ingredients together. Knead thoroughly until doughy. Press firmly into an 8 inch square Pyrex, or 9 inch Pyrex pie pan. Prick with fork. Bake 45 minutes or until golden and somewhat springy to the touch. Cut into bars or triangles. Remove to rack when slightly cooled (15 to 20 minutes). This is a great starter recipe for youngsters. Tastes good with butter, too.
