TURKEY BROTH FOR SOUP 
1 turkey carcass
Water to cover
1 stalk celery (optional)
1 carrot (optional)
1 onion (optional)

Place turkey carcass in a large pan. Cover with water. Simmer for 8-12 hours. Strain to remove all bones. Refrigerate until fat comes to top and solidifies. Remove fat and discard it. Freeze for later use.
