Chicken (can use remainder of chicken not used in cappelletti) Boiling beef or soup bone 1/2 jar tomatoes 1/2 med. onion 1 carrot 1 stick celery 2 tbsp. tomato paste 2 gallons water (or more) Salt Combine ingredients in a large pot. Bring to a boil, then turn down to simmer. Cook about 3 to 4 hours. Strain out meat and vegetables. Always skin fat off broth. |
