DUCK STEAK | |
1 duck, deboned 1 stick butter Garlic salt Meat tenderizer Salt and pepper Get up very early while the family is still asleep and shoot a duck, try to get a mallard if possible. Clean duck and let soak in salt water overnight. Remove breast meat from bone, cut into strips across grain of breast. Pat meat dry, then sprinkle with salt, pepper, tenderizer and garlic salt. Place meat in melted butter, coat all sides, then microwave on low for 2 minutes. Let sit and marinate for one hour. Put meat and marinade in light weight aluminum pan and grill on an open fire until meat is medium well done. Baste while cooling, This recipe takes all of the wild taste out of the duck. |
