NUTTY CHOCOLATE CAKE 
1 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 tbsp. unsweetened cocoa
1 tsp. cinnamon
1 c. water
2 tbsp. Canola oil
2 tsp. vanilla extract
1 tsp. vinegar
1 egg, beaten
1/4 c. chopped unsalted peanuts

Combine first 7 ingredients in an 8 inch square pan; make a well in center of mixture. Combine water and next 4 ingredients. Add to dry ingredients. Stir until well blended; top with peanuts. Bake at 350 degrees for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.

Yield: 16 servings (about 120 calories per 2 inch square). Carbohydrate, 19.8 g.; protein, 2.7 g.; fat 3.5 g.; cholesterol, 1 mg.; sodium, 50 mg.
