1/2 c. butter 1 1/2 c. powdered sugar 2 eggs, beaten 1/2 lb. vanilla wafers, crushed 1/2 pt. heavy cream, whipped 1 c. crushed pineapple 1 c. chopped nuts Cream butter and sugar; add eggs. Press half of the wafer crumbs into bottom of 8x11x2 inch greased pan. Spread sugar mixture over crumb layer. Add layer of whipped cream and cover with a layer of pineapple. Top with remaining crumbs and sprinkle with nuts. Refrigerate for 24 hours before serving. Yield: 12 servings. |
