KIELBASA DELIGHT 
1 ring Kielbasa, cut in 3/4 inch slices
2 med. onions, slice onions and cut slices in half
3 med. bell peppers, cut in lg. chunks
1 can stewed tomatoes, cut, save the juice
Salt and pepper to taste

Make mashed potatoes for 4 helpings while ingredients simmer.

In large skillet, combine the Kielbasa slices, onions, bell peppers, stewed tomatoes (with juice), salt, and pepper. If the ingredients are not covered with the juice from tomatoes, add water. Bring to a slight boil. Reduce heat. Cover and simmer until onions are tender. When onions are tender, you can serve by putting on top of individual mashed potatoes serving or on the side.
