SWEET POTATO PUDDING 
3 c. grated raw sweet potatoes
1/2 c. firmly packed light brown sugar
1/2 tsp. salt
1 tsp. ground nutmeg
1/2 c. light corn syrup
1 c. milk
2 eggs, beaten
1/2 c. chopped pecans
2 tbsp. butter, melted

Mix all ingredients in a bowl. Blend well. Pour into buttered pan. Pan should be 12x8x2 inches. Bake in preheated moderate oven (350 F.) for about one hour. Serve warm or cold with whip cream or ice cream. Makes six servings.
