FRESH STRAWBERRY PIE 
Single crust
1 qt. fresh strawberries, washed & hulled (I use more & pile them up)
1 c. + 1/2 c. sugar
1 c. water
2 tbsp. cornstarch
1 sm. pkg. wild strawberry Jello
Whipping cream or Cool Whip

Prepare pie crust as you usually do, only add the 1/2 cup sugar. Bake crust until slightly brown. Cool.

In a saucepan add the 1 cup sugar and water and cornstarch. Heat and stir until thickened. Remove from heat. While still hot add the wild strawberry Jello, stir until dissolved. Cool. When cool, pour over arranged strawberries in the crust. Refrigerate overnight. Top with whipped cream or Cool Whip when serving. Add powdered sugar to whipped cream to taste.

NOTE: Make the edge of the pie crust quite high, so the Jello mixture doesn't run over. This recipe can be used with any fresh fruit, such as raspberries, peaches. Use matching packages of Jello.
