CUCUMBER MOUSSE 
Scant 3/4 c. boiling water
1 (3 oz.) pkg. lime Jell-O
1 c. cucumber, grated
1 c. mayonnaise
2 tbsp. onion, grated
1 c. sour cream
1/4 tsp. salt

Dissolve Jell-O in water. Pour into a 2-quart bowl. Place in refrigerator until slightly thickened. When thickened, fold in remaining ingredients. Refrigerate until set. This is great served with seafood.
