SHRIMP ELIZABETH | |
6 lg. shrimp (16-20 per lb.) 3-4 oz. virgin olive oil 1 fresh crushed garlic clove 2 oz. Chardonnay or Chablis wine Fresh basil 2 oz. clam juice 3 oz. fresh spinach 2 oz. chopped bacon Mozzarella cheese slices Salt Pepper In a saute pan combine olive oil, garlic, basil, salt and pepper; warm over a low flame. Add shrimp and saute for 3-4 minutes. Add wine and clam juice. Cook only until wine and clam juice are warm. Do not bring to a boil. Place the spinach in the bottom of a baking dish and cover with the bacon. Top with the shrimp and pour half of the sauteed mixture over the shrimp. Cover with slices of mozzarella cheese and bake at 450 degrees in a preheated oven for 5-7 minutes or until the cheese has melted and browned slightly. Serve immediately from the oven. |
