ZUCCHINI BREAD 
2 sm. zucchini
1 c. walnuts
3 c. self-rising flour
1 tbsp. cinnamon
3 eggs
1 1/2 c. sugar
1 c. oil
1 strip orange peel (1 inch wide)
1 strip lemon peel (1 inch wide)
1 tbsp. vanilla extract

Shred the zucchini (do not peel); drain well. Chop the nuts quickly in food processor. In a bowl, combine the grated squash and flour and cinnamon. Into the food processor bowl, put the lemon peel, orange peel, sugar, eggs, oil and extract. Process until well blended. Add to bowl of flour and stir to mix. Divide the batter into two well greased 9 x 5 x 3 inch loaf pans. Bake in 350 degrees for 60 minutes. Cool 10 minutes, then remove from pan and cool completely.
