OATEN CAKES 
1 egg
1 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
1 stick (8 tbsp.) butter at room temperature
3/4 c. firmly packed light brown sugar
1/2 tsp. vanilla
2 c. old-fashioned oatmeal
2 cookie sheets, ungreased

Preheat oven to 375 degrees. Crack egg carefully into a small cup. Set it aside. Get a big mixing bowl. Put the flour, baking soda, and salt into a sifter and sift them into a bowl. Put the softened butter and sugar into a medium mixing bowl. Wet a dish towel, wring it out, and fold it. Put the folded towel under the bowl to keep if from sliding as you mix. Using an electric mixer (with a grown-up's help), beat the butter and sugar together until light and fluffy. Add the egg and vanilla and beat them in well. Add the flour, baking soda, and salt. When the mixture is smooth, stop beating. Put in the oatmeal and mix it with a wooden spoon to make a firm dough. Put heaping teaspoon of dough on cookie sheet. Put 12 of these on each cookie sheet, 2 inches apart. Now you have 24 little mounds. Smash each one down lightly with the palm of your hand. Bake for 8 minutes in center of the oven. Ask for help to remove cookies from oven. Bake rest of cookies!

Makes about 34 cookies!
