PUMPKIN ROLL 
1/2 c. pumpkin
3 eggs
1 c. sugar
1 tsp. vanilla
3/4 c. flour
1 tsp. ginger
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. salt

Fold mixture together and spread onto greased and floured medium sized cookie sheet with sides. Spread 1 cup chopped nuts over raw mixture and bake at 350 degrees for 15 minutes. Remove from pan quickly while still warm and place on a towel sprinkled with powdered sugar. Roll up like jelly roll, towel and all. let cool.

FILLING:

1/2 tsp. vanilla
1 c. powdered sugar
2 (3 oz.) pkgs. cream cheese
4 tbsp. butter

Beat until smooth. When roll is cool, spread on filling and then reroll and keep refrigerated so filling stays firm. Slice like a jelly roll and serve.
