FRESH FRUIT AND YOGURT SALAD 
2 env. unflavored gelatin
1 1/2 c. fresh orange juice, divided
1 tbsp. sugar
16 oz. vanilla yogurt
3 tbsp. honey
1/2 tsp. vanilla
3/4 tsp. grated orange peel
1 1/2 c. halved, pitted fresh cherries
1 1/2 c. peeled, diced nectarines
1/4 c. chopped walnuts or almonds

In a medium saucepan, sprinkle unflavored gelatin over 1 cup orange juice. Cook over low heat, stirring until gelatin dissolves, about 3 minutes. Remove from heat. Stir in sugar, remaining 1/2 cup orange juice, yogurt, honey, vanilla and orange peel. Stir until mixture is smooth. Chill, stirring occasionally, until mixture is consistency of unbeaten egg whites. Fold in nectarines, cherries, and nuts. Turn into a 2-quart serving bowl or 8 dessert dishes and chill until set. Makes 8 servings.
