FRESH FRUIT CHICKEN SALAD 
2 whole chicken breasts, skinned, boned & cooked
1 fresh pear, sliced
1 fresh nectarine, sliced
1 fresh peach, sliced
2 fresh plums, sliced
Lettuce
Creamy mustard dressing

Slice and divide chicken and fruit among 4 individual lettuce-lined plates. Serve with creamy mustard dressing drizzled over. Makes 4 servings. 209 calories per servings.

CREAMY MUSTARD DRESSING:

1/4 c. olive oil
1 1/2 tbsp. Dijon-style mustard
1 tbsp. white wine vinegar
2 tbsp. sugar

Combine ingredients in a jar. Shake well to blend. Makes 1/3 cup. 106 calories per tablespoon.
