DAUGHTER JANE'S MEXICAN STACK
DINNER
 
Light corn chips, broken
Brown rice, cooked
Chili (without beans)
Lettuce, shredded
Onions, chopped
Tomatoes, chopped
Hot cheese sauce
Mild taco sauce
Black olives (optional)

Fix amount desired of above ingredients.

CHEESE SAUCE:

1 can Rotel tomatoes
1 lb. Velveeta cheese, cut in chunks

Beat tomatoes with fork. Combine with cheese and melt in double boiler or microwave. Best if eaten after it has cooled at room temperature.

Since microwave ovens vary in power, you may need to adjust your cooking time.
