TRINITY RIVER MUD CAKE WITH
FLOODTIDE FROSTING
 
CAKE:

4 eggs
2 c. sugar
1 c. butter, melted
1 1/2 c. flour
1/3 c. cocoa
2 tsp. vanilla
1 c. coconut
1 c. pecans, chopped
1 sm. pkg. miniature marshmallows

Combine eggs and sugar. Beat with mixer at high speed for 5 minutes. In separate bowl, combine melted butter, flour, cocoa, vanilla, coconut and pecans. Add this to first mixture and mix well. Bake in greased, floured 9 x 13 x 2 inch pan at 350 degrees for 30 minutes, or until cake tests done. Remove from oven and spread marshmallows on top and return to oven until marshmallows are melted.

FROSTING:

1/2 c. butter, melted
6 tbsp. milk
1/3 c. cocoa
1 box powdered sugar
1 tsp. vanilla
1 c. pecans, chopped
