SEVEN VEGGIE MEDLEY | |
Prepare ingredients according to family's appetite. 6 tomatoes with skin, quartered 1 med. to lg. onion, cut bite size 2 fresh pickle size zucchini, cut bite size 1/2 green sweet pepper, sliced thin 6 or 7 lg. fresh mushrooms 1 c. shredded Mozzarella cheese 2 fresh ears sweet corn, cut off cob Olive oil In a skillet (stainless steel) saute onions until crispy tender. Add zucchini, m green pepper, mushrooms, tomatoes and corn. Cook until crispy tender. Stir lightly and often (lower heat). Use lid occasionally for steaming. Sprinkle with cheese and cover with lid until cheese is melted. Serve with Parmesan cheese sprinkled over and perhaps soy sauce. Add each veggie in the order given and give each one a little time to cook before the next one is added. Start cooking veggies on high heat. |
