ROLLED AND STUFFED CHICKEN | |
1 c. Mozzarella cheese 1/3 c. ricotta cheese 2 tbsp. grated Parmesan cheese 1/4 tsp. basil 1/4 tsp. thyme 1/4 tsp. oregano 1/8 tsp. salt and pepper 4 chicken breasts (boneless) Mix cheeses and spices well. Spread cheese mixture down center of each chicken breast. Roll up and secure with a toothpick. Rub each breast in melted butter and roll in bread crumbs. Place in a casserole dish. Add white wine (enough to go 1/4 way up each stuffed breast). Cook at 325 degrees for approximately 30 minutes. NOTE: The slower you bake, the less likely the cheese is to ooze out. |
