ITALIAN COOKIES 
2 c. plus 2 tbsp. flour
1/2 c. plus 2 tbsp. butter
4 med. egg yolks
1/2 c. plus 2 tbsp. sugar
Grated zest of 1 lemon
Confectioners' sugar

Preheat oven to 375 degrees. Put all ingredients except confectioners' sugar in large mixer bowl. Mix together. Do not refrigerate unless absolutely necessary.

Roll out the dough lightly to a thickness of 1/4 inch. Cut out cookies (about 2 inch diameter) and place on ungreased baking sheets.

Bake for about 15 minutes, or until very lightly browned. Remove from sheet immediately and cool when tepid, sprinkle with confectioners' sugar.

NOTE: To freeze unbaked cookies, roll out dough, shape cookies and place on trays. Place trays in freezer. When frozen, remove from trays and place in plastic bags for freezer storage. Bake without defrosting.
