PAT JOHNSON'S TABOULEH | |
1/2 c. fine bulgar wheat 3 med. fresh tomatoes, finely chopped (1 c.) 1 c. finely chopped parsley 1 c. finely chopped green onion 1/3 c. lemon juice 1/3 c. olive oil Put bulgar wheat in a bowl. Add cold water to just cover the wheat. Let stand until water is absorbed, less than 10 minutes. Add tomatoes, parsley, green onion and lemon juice. Toss. Just before serving add olive oil. Serve with pita bread wedges. |
