MUSSELS MARINARA 
4 doz. mussels, scrubbed well
2 tbsp. olive oil
1 tbsp. minced garlic
4 plum tomatoes, seeded and chopped fine
2 tbsp. chopped fresh oregano (2 tsp. dried oregano)
1/2 tsp. red pepper flakes
1/2 tsp. fresh ground pepper
1/2 c. white wine
1/2 c. water
2 tbsp. fresh lemon juice

Heat oil in large saucepan. Add garlic and tomatoes. Cook 5 minutes. Add next 6 ingredients. Bring to a simmer. Add mussels. Cover. Cook until shells open (around 10 minutes). Discard any unopened shells. Serve with some crusty bread.
