GERMAN POTATO SALAD 
5 lbs. potatoes
1 lb. bacon
1 lg. onion
1/2 c. white vinegar
1/2 c. water
1/3 c. sugar
2 tsp. flour
Chopped green onions or parsley for garnish (opt.)

Boil potatoes whole. Dice bacon and fry until crisp, remove and drain. Dice onion and fry in bacon grease until transparent. Add water, vinegar and sugar to onions, sprinkle flour over mixture. Simmer and stir until mixture thickens. Add salt and pepper to taste. Pour mixture into deep bowl. Slice potatoes thickly, toss gently in sauce mixture. When potatoes are coated with sauce, add crumbled bacon and toss gently. Garnish with chopped green onions or parsley.
