“SAMMY'S #1 SALMON PATTIES” IS IN:

SAMMY'S #1 SALMON PATTIES 
1 (14 3/4 oz.) can salmon
1/2 med. onion, chopped
2 eggs
1 tsp. ground pepper
1 tsp. fresh lemon juice
1 whole pkg. saltine crackers, crushed

Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.

Form into patties 3/4 to 1-inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.

In large frying pan heat 1/2-inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold.

Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for!

Scrumptous! I always added milk in mine yet I didn't have any on hand went on google found this recipe and Walaah! I added bell pepper & green onion & 1/2 tablespoon of Mayo as well (umph umph umph) YUMMY!

I had OreIda Crinkle Fries as My side this time. I like rice as a side too. I believe the FUN of Salmon Patties is the different variations that give KICK!

However, she served them with fresh, hot homemade biscuits and applesauce. Being raised in the South, we would cut open the biscuits, place the pattie inside, and eat it like that. Quick, cheap supper anytime!

Imagine my surprise to find my hubby's salmon patty recipe posted on your site! He learned the recipe from the mother of his former boss 30 years ago! I love them so much! Leftover patties are good in a sandwich with ketchup. Sam is making them tonight and I can't wait.

Thanks for the recipe! I had to improvise a little but they were still delicious - instead of the crackers, I used roughly 2 cups Panko breadcrumbs (which are great in meatloaf too), added about a 1/2 teaspoon salt, and instead of chopped white or yellow onion, I used what I had on hand, about a big handful of chopped green onions and followed the rest of the recipe - used Olive Oil on a setting 6 on an electric stove top - they were perfect!

This is the same recipe my mother handed down to me, only thing different is she would mix mayo and mustard, warm it and pour it over the fried salmon patties. GOOD STUFF!!

This is the same recipe my mother used except we rolled the patties in yellow corn meal before frying. Really makes them crunchy.

Your going to have to trust me on this. Make them using only saltine crackers and they will be so crunchy you will be gobsmacked amazed. Corn meal isn't necessary to make them crunchy. Try it. You will not be disappointed.
