ESCALLOPED SCALLOPS 
1 1/2 c. scallops (about 1 lb. sm. bay scallops)
1/2 c. melted butter
1/2 c. soft white bread crumbs
2/3 c. evaporated milk
1 c. rolled Ritz crackers

Layer scallops and bread crumbs. Pour milk and butter over them. Sprinkle crackers on top. Bake covered at 300 degrees for 30 minutes and then 15 minutes uncovered. Serves 4.
