4 center cut pork chops Salt and pepper to taste 4 potatoes 1 tbsp. oil 3 med. onions, cut in quarters 2 tbsp. red wine vinegar 1/2 c. water Peel potatoes, cut lengthwise into quarters. Place in saucepan and cover with cold water. Bring to a boil and simmer for 30 seconds. Drain. Heat oil in large skillet, add chops and cook until both sides are golden brown. Scatter onions and potatoes around chops and cook, turning to brown, about 5 minutes. Cover tightly and cook for 10 minutes more. Pour off fat from skillet; add wine vinegar and water. Cover and cook 10 minutes until chops are tender. |
