QUICK BAKED FISH WITH GREEN RICE 
2 c. cooked rice
1 (10 oz.) pkg. frozen chopped spinach, thawed
1/2 c. shredded cheddar cheese, divided
1 lb. fish fillets (sole, flounder or halibut) thawed, if frozen
Salt and pepper to taste
2 tbsp. lemon juice
2 tbsp. butter

In greased 8x8x2 baking dish or 1 1/2 quart casserole dish, mix well rice, spinach and 1/4 cup cheese. Season fish with salt and pepper; arrange over rice mixture. Sprinkle with lemon juice then dot with butter. Top with remaining 1/4 cup cheese. Bake in 375 degree oven 20 to 25 minutes or until fish flakes easily with fork. Makes 4 servings.
