MEXICAN OMELET 
2 eggs, beaten
1 green chile, chopped
1/4 c. cheese, grated
2 tbsp. milk
1/8 c. onion, chopped
Oil, for frying

Combine eggs, chile, cheese, milk and onion; beat. Season to taste. Pour into frying pan with oil. When one side is slightly brown, turn and brown on other side.
