GROUND ROUND, KRAUT AND SPUD
CASSEROLE
 
1/4 lb. bacon
1 1/2 lb. ground round
1/4 tsp. caraway seed
1 (#2) can sauerkraut
4 servings instant mashed potatoes

Cube and fry bacon until crisp. With slotted spoon, remove bacon onto saucer. Pour off most of fat. Put ground round into pan, cook until browned and crumbly. Add bacon cubes, salt and pepper to taste and sprinkle the caraway seed over the top. Cover and simmer for 1/2 hour. Do not add any water unless it gets too dry.

Prepare mashed potatoes according to package directions (or make them from scratch).

Spray a 1 3/4 quart casserole with non-stick spray and put ground round mixture into casserole. Pile mashed potatoes on top and dot with butter.

Bake at 350°F for 20 minutes. Serve with sauerkraut.
