TURKEY SOUP | |
Turkey Carcass (don't pick it too clean) Chopped onions, carrots and celery Leftover and/or fresh mixed vegetables Noodles and/or rice Barley Salt and pepper to taste Water as needed After Thanksgiving dinner (while everyone else is doing the dishes) start boiling the turkey carcass with the chopped onions, carrots and celery to make your turkey broth. Let this mixture boil for at least 1 1/2 hours so that the turkey will fall off the bone. Let set overnight and skim off any fat the next day and then separate the turkey from the bones and throw the bones away. Bring your broth mixture back to a boil and add the other ingredients and cook for at least an hour. Serve hot with leftover biscuits, etc. |
