CREAMY RICE PUDDING 
1/2 c. rice
2 c. milk
1/4 tsp. salt
2 tbsp. butter
3 beaten eggs
3/4 c. sugar
1 1/2 c. milk
1 tsp. vanilla
1/2 tsp. nutmeg

Mix 1/2 cup rice, 2 cups milk and 1/4 teaspoon salt. Cook over very low heat until rice is tender. Stir in 2 tablespoons butter, 3 beaten eggs, 3/4 cup sugar, 1 1/2 cup milk, 1 teaspoon vanilla and 1/2 teaspoon nutmeg. Pour into 1 1/2 quart casserole. Bake at 350 degrees for 50 minutes. Makes 8 (1/2 cup) servings. Very good.
