FRENCH BEAN SOUP 
1 c. beans (at least 8 varieties)
6 c. water
1 ham hock
1 tsp. salt
1/4 tsp. ginger
1 med. onion, chopped
1 clove garlic, chopped
1/4 tsp. lemon pepper (opt.)
1 tbsp. catsup
1 tbsp. barbecue sauce or smoked barbecue sauce
1 tbsp. sugar
1 (16 oz.) can tomatoes, chopped
2 ribs celery
1 red pepper, crushed or 2 tbsp. chopped green chili peppers

Wash beans well and soak overnight in water. Do not drain. In the morning, add ham hock, salt and ginger. Cook until the beans are tender. Add other ingredients. Bring to a boil. Reduce to simmer for 2 1/2 to 3 hours. Stir occasionally. Add water if needed.
