FRESH ORANGE CAKE 
2 1/4 c. sifted cake flour
1 1/2 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1/2 c. butter or vegetable shortening
1 c. liquid = 1/4 c. orange juice plus 3/4 cup milk or water
2 eggs
Grated rind of one orange

Cream shortening and sugar. Sift dry ingredients together and add to shortening mix. Add grated rind. Blend in 2/3 cup of the liquid and beat two minutes. Add the remaining liquid and the two eggs. Beat two minutes more. Pour into two well greased and floured pans. Bake 30 minutes at 350 degrees. Cool on racks.
