COCONUT CREAM PUDDING 
1/2 c. sugar
5 tbsp. flour
1 egg
2 c. milk
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1/2 tsp. lemon extract
1-3 c. coconut

Blend sugar and flour; add egg and milk. Cook in double boiler until mixture becomes thick and creamy. Stir frequently. Add rest of ingredients, pour into glass dish. Cool and chill. Serve with cream.
