STRAWBERRIES AND CREAM SHORTCAKE 
2 c. flour
1 tbsp. baking powder
1 tsp. grated orange rind
1/4 tsp. salt
1/4 c. sugar
2/3 c. shortening
2/3 c. milk
1 egg, beaten
1 tsp. vanilla
1 can sweetened condensed milk
1/2 c. cold water
1 box instant vanilla pudding
4 oz. Cool Whip or 1/2 pt. whipped cream
Sliced strawberries

Combine flour, baking powder, grated orange rind, salt and sugar. Cut in shortening. In small bowl, mix together milk, 1 egg, slightly beaten, 1 teaspoon vanilla. Add this liquid to first mixture and mix until moistened. Grease and flour 2 round cake pans. Spread dough in pans and bake in 450 degree oven for about 10 minutes or until done.

In the meantime, combine 1 can sweetened condensed milk and 1/2 cup cold water. Mix in 1 box instant vanilla pudding. Chill until thickened; then fold in 4 ounce carton Cool Whip or 1/2 pint whipped cream, whipped. Chill again. Spread half of filling on one layer and spread some slices strawberries over this. Repeat with second layer.

NOTE: Can also be made in 9 x 13 cake pan. Leave cake in pan; spread all of filling over cake and decorate top with sliced strawberries.
