POTATO AND LEEK SOUP 
2 slices bacon, chopped
4 leeks, chopped
4 med. potatoes, finely chopped
2 cans chicken broth or bouillon cubes
2 cans water
Salt and pepper
1 onion, thinly sliced
1 c. heavy cream

Saute bacon in heavy saucepan for a few minutes, add onion and saute until brown. Add leeks and saute for 2 minutes stirring constantly. Add potatoes, chicken broth, water, salt and pepper, bring to a boil and simmer 40 minutes. Add heavy cream and bring again to boil. Serve like this or if you prefer put through blender and serve.

We like half of it blended and then mixed with the unblended half. Save some of the cooked leeks and bacon to use as a garnish if all of the soup is blended.
