ZUCCHINI AND STOVE TOP CASSEROLE | |
1 can cream of mushroom soup 1/4 c. butter, melted 1/2 c. sour cream or plain yogurt 4 oz. Cheddar cheese, grated 1/2 c. onion, chopped 1/4 c. mushrooms 4 c. zucchini, diced; cooked about 4 minutes & drained well 1 box Stove Top stuffing mix Cut zucchini into bite-size pieces. Cook about 4 minutes and drain well. Mix together first 6 ingredients. Add stuffing mix, spices and mix well. Add dry stuffing and zucchini. Mix well. Place in buttered dish. Bake at 350 degrees for 30 minutes, covered. |
