WHOLE WHEAT BANANA NUT BREAD 
1 c. shortening
2 c. sugar
6 ripe bananas
4 eggs
2 1/4 c. whole wheat flour
1 tsp. salt
2 tsp. baking soda
1 tsp. vanilla
1 c. chopped pecans

Cream shortening and sugar; mash bananas and add to creamed mixture. Add eggs, one at a time, beating after each addition. Sift dry ingredients together and add banana mixture. Add vanilla and pecans. Pour into greased loaf pans. Bake at 350 degrees for 45 minutes or until done. This freezes well.
