4 tbsp. butter
1 tbsp. sugar
1 egg yolk, beaten
1 egg white, beaten
1 c. mashed sweet potatoes, cooked
3/4 c. flour
2 tsp. baking powder
1 c. skim milk
Dash of nutmeg

Cream sugar and butter. Stir in egg yolk, sweet potatoes, flour, baking powder, milk, and nutmeg. Beat until smooth. Fold in the egg white, stiffly beaten. Cook in waffle iron; sprinkle with cinnamon and sugar and serve.
