SWEET POTATO PIE 
3 med. sweet potatoes
3 eggs
1/2 c. firmly packed dark brown sugar
1/2 tsp. salt
1 can evaporated milk
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1 tbsp. molasses
1/8 tsp. ground ginger
1 c. cream for whipping
1/8 tsp. allspice

Precook 2 pie crusts; set aside. Cook sweet potatoes. Mash with electric beater until smooth. Beat in eggs, brown sugar, salt, spices and milk. Beat until smooth. Pour into pie crusts. Bake in oven at 425 degrees until center is almost set but soft. Cool pies. When ready to serve, mix whipping cream and molasses in bowl, beat until stiff. Spoon onto pie.
